Cajun Injector Pot Roasted Quail

Ingredients
- 6 whole Quail
- 1 16 oz jar Cajun Injector Duck Marinade
- 1 tbsp Cajun Injector Cajun Shake
- 1 tbsp Original Louisiana Jalapeno Hot Sauce
- 2 tbsp Cajun Injector Cottonseed Oil
- 2 Yellow Onions Diced
- 1 Bell Pepper Diced
- 1 Stalk Celery Diced
- 1 Clove Garlic Minced
- 3 cups Chicken Broth
Directions
- Inject each quail with 2 ounces of the marinade and season outside with shake and hot sauce. In a heavy cast iron dutch oven, place cottonseed oil and heat ovr high heat.
- When oil is hot, place each quail in the pot and brown on all side until golden brown, add onions, bell pepper, celery, garlic, and broth bring to boil reduce to a simmer and cook for 2 hours or until quail are tender.
Preptime: 10 minutes
Cook time: 2 hours
