Cajun Injector Smoked Bison Roast

Ingredients
- 1 Cajun Injector Smoker Kit
- Cajun Injector Smoking Brine
- Cajun Injector Basting Spray
- Cajun Injector BBQ Finishing Sauce
- Pecan Smoker Pellets
- Oak Smoker Pellets
- 1 4 - 6 lb Bison Roast
- 3 tbsp Magic Garden Savory Roast Beef Rub
- 1 cup Apple Juice
Directions
- Set smoker temperature to 225 F. Once smoker is ready, inject 2 ounces per pound of the smoking brine throughout the roast.
- Next season the outside liberally with roast beef seasoning. Place roast on rack in smoker. Spray with basting spray and por apple juice into drip pan close somker door and lock latch.
- Place 1/4 cup of either smoking pellets in wood tray and rotate to dump pellets onto ellement.
- Let the roast smoke for about 4 - 5 hours, spray with basting spray 2 hours into the process. After four hours check internal temperature of roast, it should be at 165 F.
- At this point pull roast from smoker and apply BBQ finishing sauce. Let roast rest 15 minutes covered before carving.
Preptime: 10 minutes
Cook time: 4 - 5 hours
