Cajun Injector Pot Roasted Venison

Ingredients
- 1 4-6 lb Venison Rump Roast
- 1 16 oz jar Cajun Injector Venison Marinade
- 2 med Yellow Onions, diced
- 1 Bell Pepper, diced
- 1 stalk Celery, diced
- 2 cloves Garlic, minced
- 1 tbsp Cajun Injector Cajun Shake seasoning
- 2 tbsp Louisiana Gold Green Sauce
- 1 tbsp Cajun Injector Cottonseed Oil
- 3 cups Beef Broth
Directions
- Inject the roast with 2 oz. per pound of the venison marinade and season the outside with Cajun Shake and Louisiana Gold Green Sauce.
- In a heavy cast iron Dutch Oven, place the cottonseed oil and heat over high heat.
- When the cottonseed oil is hot, place the roast in the pot and brown on all sides until golden brown.
- Remove from the pot and add onion, bell pepper, celery and garlic.
- Saute until browned.
- Deglaze the pot with 3 cups of beef broth.
- Add the roast back to the pot and return to a boil.
- Once a boil is achieved, reduce heat to simmer and cook for 3 hours or until roast is tender.
