Cajun Injector Pot Roasted Venison

Directions

  1. Inject the roast with 2 oz. per pound of the venison marinade and season the outside with Cajun Shake and Louisiana Gold Green Sauce.
  2. In a heavy cast iron Dutch Oven, place the cottonseed oil and heat over high heat.
  3. When the cottonseed oil is hot, place the roast in the pot and brown on all sides until golden brown.
  4. Remove from the pot and add onion, bell pepper, celery and garlic.
  5. Saute until browned.
  6. Deglaze the pot with 3 cups of beef broth.
  7. Add the roast back to the pot and return to a boil.
  8. Once a boil is achieved, reduce heat to simmer and cook for 3 hours or until roast is tender.
