Cajun Injector Pot Roasted Ducks

Directions

  1. Inject each duck with 2 oz. of the Duck Marinade and season the outside with Cajun Shake and Louisiana Jalapeno Flavor Hot Sauce.
  2. When the oil is hot, place the ducks in the pot and brown on all sides until golden brown.
  3. Add onion, bell pepper, celery, garlic and 3 cups of chicken broth, reduce heat to simmer and cook for 2 hours or until ducks are tender.
  4. In a heavy cast iron Dutch Oven, place the cottonseed oil and heat over high heat.
Yield: 4 servings
Preptime: 10 minutes
Cook time: 2 hrs.
