Cajun Injector Hickory Smoked Brisket

Directions

  1. Trim any excess fat from the brisket but taking care not to remove all of it.
  2. Inject the brisket with the Hickory Cajun Injector using 2 oz. per pound.
  3. Generously season the brisket with Cajun Shake and rub to insure even distribution.
  4. Set the temperature setting to 225 F. and the timer for 7 hours.
  5. Place meat on the rack in the Cajun Injector Smoker and load 1/3 cup of Magic Garden smoker pellets of your choice in the chamber and rotate to empty into the smoke chamber.
  6. Experiment with different techniques such as dry smoking and using our basting sauce to mop the brisket during the last hour of cooking or wet smoking with apple juice in the pan.
