Buffalo Catfish Wrap

Ingredients
- 1 lb Catfish Filets
- 1 bag Cajun Injector Chicken Fry
- 1 Tomato, diced
- 1/2 cup Louisiana Wicked Wing Sauce
- 8 ea Flour Tortillas
- 2 cups Cole Slaw
- 2 cup Cottonseed Oil, for frying
Directions
- Preheat oil to 350 degrees F.
- Cut catfish fillets into strips about 1/2-3/4 inches wide and batter according the directions on the bag.
- Fry until golden brown, remove and drain on paper towels.
- Toss catfish strip in wing sauce and coat evenly.
- Heat tortillas in an oven or microwave until warm and pliable.
- Assemble the wrap by adding coleslaw, catfish strips and diced tomatoes.
Preptime: 10 minutes
Cook time: 7 minutes
