Cajun Injector Bacon Wrapped Smoked Elk Roast

Directions

  1. Inject roast with Creole Garlic marinade.
  2. Rub roast with hot sauce, then sprinkle with Cajun Shake.
  3. Wrap completely with bacon and secure with toothpicks.
  4. Place in smoker at 225 degrees and cook until an internal temperature of 165degrees is reached.
